Steps to get this coffee perfect before it gets in your cup
This Brazilian Coffee goes throw 7 processing steps, before it gets to you
- Hand-Picking: Coffee cherries are carefully picked by hand to ensure only the ripest cherries are selected.
- Soaking: The cherries are soaked in cold water for 24 hours.
- Pulping & Fermentation: The soaked cherries are pulped and then fermented without water for another 24 hours.
- Washing: The fermented coffee is washed thoroughly with clean water to remove any remaining pulp.
- Drying Process:
- First, a centrifuge removes excess water.
- The beans are then dried in a mechanical dryer with a cycle of 12 hours drying followed by 12 hours resting, aiming for a moisture level of 16%.
- Resting in Silos: The coffee rests in silos for 10 days to achieve uniform moisture content.
- Final Drying & Resting:
- The 12-hour drying and resting cycle continues until the coffee reaches a final moisture level of 11%.
- Finally, the beans rest in special silos for 45 days to stabilize before moving to the drying mill.

- Cinnamon Roast: The lightest of all roasts, Cinnamon roast coffee is light brown with no oil on the surface. It has a bright, lively acidity with a delicate body. The roast preserves the beans’ natural characteristics, offering a light, grain-like taste with a mild, sweet finish.
- Medium Roast: Medium roast coffee is medium brown and balanced with no surface oil. It offers a harmonious blend of acidity, sweetness, and body. Taste notes include soft caramel, toasted nuts, and subtle hints of chocolate. You’ll also find a pleasant, slightly fruity undertone, like red apple or berry, that rounds out the overall flavor profile, making it smooth and approachable.
- City Roast: Known as a medium-dark roast, City roast coffee has a slightly darker brown color and a light sheen of oil. It’s full-bodied with lower acidity and rich, complex flavors. Expect deeper notes of dark chocolate, roasted almonds, and a hint of spice, like cinnamon or clove. There’s often a fruity complexity, with hints of dried cherry or plum, giving it a satisfying, lingering finish.
- Italian Roast: The darkest of these roasts, Italian roast coffee is nearly black with a shiny, oily surface. It’s bold and intense, with very low acidity and a full-bodied, smoky profile. The taste is dominated by deep, bittersweet notes of dark cocoa, charred wood, and molasses, with subtle hints of roasted nuts. Occasionally, you might catch a whisper of dark berry or black currant, adding a touch of complexity to this robust and intense roast.
